A Summer Recipe to Celebrate Mindful & Healthy Eating: Tomato Gazpacho


This refreshing gazpacho is a perfect reminder that healthy eating doesn’t need to be complicated. Bursting with seasonal summer flavours, it’s nourishing, hydrating, and effortless to prepare.


Ingredients (serves 2–3):

  • 4 ripe tomatoes, roughly chopped

  • 1 cucumber, peeled and chopped

  • 1 red pepper, deseeded and chopped

  • A small bunch of fresh coriander

  • Juice of 1 lemon

  • 2 tablespoons olive oil

  • Sea salt and black pepper to taste


Method:


  1. Place the tomatoes, cucumber, red pepper, coriander, lemon juice, and olive oil in a blender.

  2. Blend until smooth, then taste and season with salt and pepper.

  3. Chill in the fridge for at least 30 minutes—gazpacho tastes best cold!

  4. Serve in bowls or glasses, garnished with a few coriander leaves or a drizzle of olive oil.
